Is it already Saturday night? No! Monday is already looming way too large for me. Blahhh...
We got out early on Friday because of the storm, so I went home and created my own storm in the kitchen, in the form of a Spanish Tortilla (scroll down). I was very proud of flipping that thing onto a plate then back in the pan without splashing raw egg mixture all over the place.
My first class on the Pilates reformer machine was cancelled last night because of the weather, which was a bummer, but I still have my mat class on Sunday mornings, which I just started doing. I was getting really bored just going to the gym and doing the same old things over and over, so I'm going to try these classes for awhile and see how they go.
This has turned out to be a big cooking weekend for me, in my quest to eat only real, whole foods. That sure eliminates a lot! Like bottled salad dressing, for one. I need to find a little glass container for dressing so I don't have to keep mixing olive oil and vinegar each time I eat a salad, which has been quite frequent lately. Tomorrow I have lined up to make: homemade milk chocolate pudding, pumpkin pudding, banana-chocolate soy shakes, and a chickpea stew. That should be enough food to have on hand for the week!
So yeah, the storm really raged last night. The ice sounded like buckets of tacks hitting my window all night long, and the sidewalks were covered in a slushy, icy, mashed potato mess. So, good weekend to be indoors cooking while everything melts away.
